I’ll admit that my family has dubbed me the Dessert Queen- a title I wear proudly (I mean, I get to be a queen of something- right?). I try my best to make my desserts healthy and GOOD for you, so we’re killing two birds with one stone. Coconut oil is famous for boosting your metabolism, aiding in digestion, helping control blood sugar, and a host of other benefits that help make this fudge good for you.
Just leave it to me to find a way to make a dessert healthy- okay? (I still haven’t found one for fried doughnuts, but if you do, hit this girl up!)
This is not only a favorite of mine but also a huge family favorite! Coconut oil FUDGE disappears very quickly around this house. You make a batch and BOOM, it just disappears- not saying that I had anything to do with it!! Thankfully it’s quick and easy to make and I’m excited to share the recipe with you!
Coconut Oil Fudge
· Melt coconut oil until liquid and cool,
· Combine all other ingredients in a medium bowl,
· Add coconut oil and mix with an immersion blender or spatula,
· Pour into pan,
· Set in the refrigerator (or freezer, it’s faster) until hardened, then
· Cut in pieces and serve!
After the tarts are hardened they can be left out as well, and they should keep their shape. It’s just personal preference whether you like yours a bit harder in the refrigerator or softer!
