If you all are familiar with my cookie dough love, (or maybe an obsession) then this recipe should be no surprise. I love this granola recipe, not only because it’s gluten-free, sugar-free, and protein-rich, but it takes like 10 minutes to make….REALLY! And it tastes just like a big cookie and I’m pretty sure you’re gonna love it just as much as I do…which is a lot.
2 sticks (1 cup) Butter
1 cup Coconut Sugar
1 tablespoon Vanilla
1 teaspoon Sea Salt
2/3 cups chopped Nuts-preferably pecan pieces
2 cups Almond Flour
2 cups Quick Rolled Oats
Preheat oven to 400° Melt butter in a pan and add coconut sugar salt and pecans. Stir together and add vanilla and almond flour and oats. Spread put parchment paper on a cookie sheet and spoon mixture on and spread around. Bake for 7 to 10 minutes. (Careful it burns easily!) Pull out of the oven and break up the mixture. Let cool so it hardens and then it’s ready to serve!

This is so perfect for breakfast, snack, on the road…the list goes on! It’s my favorite with almond milk for breakfast! It would also to be perfect for company, especially now over the holidays! It’s quick to whip up and more healthy than holiday treats!
Be careful not to leave it on the counter or it might disappear really soooooon. I’m not speaking from experience…okay maybe! 🙂
